Did a 1949 kaiser deluxe come with a single barrel carb or were they all double barrel?

The Deluxe would have had the 2bbl carb.

All Kaiser Deluxe series automobiles for 1949 and 1950 model years (K492 and K502 series on the door post serial number tags) have the dual-manifold 226 engine, with a carter 2 barrel carb.  All Kaiser Special series automobiles for 1949 and 1950 model years (K491 and K501 series on the door post serial number tags) came with the 1 barrel carb 100 bhp version of the 226 (the deluxe version was rated at 112 bhp).

Refer to the appropriate sections of KFOCI HANDBOOK Version 4.0 (the CD that went out in 2009-2010) for more information on engine set-ups.

Was the only difference in the engines the intake and carb?

There were a number of differences between the 100bhp version of the 226 (in the Specials) and the 112 bhp version in the Deluxe.  Check your 1949 Kaiser-Frazer Parts List and the engine servicing information in the blue cover 1947-48-49 Kaiser-Frazer Shop Manual for the differences

The engines with a single barrel carburetor were painted gray and engines with a two barrel carburetor were painted lettuce green.
