Is there some sort of list or some way to know exactly what size, length and thread pitch are needed for the various bolts, nuts, etc. that I need to put the car back together? For instance, we’re getting ready to put the gas tank back in. I need to know what I need to mount it and what screws I need to install the fuel sending unit.

I would go to the parts manual for your vehicle.
This is from the HJ Parts Manual.
VIEWED ON CIRCLEKF.COM
I give the numbers to the guys at Tacoma Screw and they provide the nuts and bolts I need.

The back pages (297-300) of the 1949 Kaiser Frazer parts book has detailed info on hardware. As an example it gives bolt, screw, plug dimensions and then gives the assigned three digit parts number. These carry over to the 1951 Orange Kaiser parts book. The 1951 book also shows the dimensions of screws/bolts/etc. and then the three digit hardware part number for the parts people. Unfortunately carrying forward to the 52/53 supplement those clues are replaced with ----- instead of numbers. For 1954 the new system went with Willys style which is GM****** style numbers. But going back to the 1951 book the needed part can usually be figured out. The books referenced should be able to be found on Circle KF website.

Special bolts and screws or 'hardened bolts' are assigned the typical KF part number 2*****.

My car is 48.

For a 1948 you would need the 1947-1948 Illustrated Parts list for Kaiser and Frazer cars.

I don't know about KF cars but almost all the nuts & bolts on my Aero were fine thread & some were "in between" lengths. I cleaned & replated most, but found that Fastenal was a good source for several. They have a good search filter on their website.

I have the book library posted. I guess I just have to figure out the way it works, for lack of a better way to say it.

I found my 1948 combined chassis and parts list book. I am having a difficult time making sense of it. How do I figure out what bolts I need to mount to tank to the frame and what screws I need to mount the sending unit to the tank?
-
I would suggest going to Page 48.
As I read it you are looking for part number 539 --- 6 of them.
To fasten the Sending Unit to the tank.
-
Page 48 in my book, which looks identical to the one you posted, show exploded view of the exhaust system.

Page 44, [3.580] screw #10 - 32 x 7/16" round head cross recess..... part number 539 (the part number was for parts counter use).

If You have a Old Hardware Store, Auto Parts, & More, You can find Vintage Part’s that Match.
Good example I had New re Chrome Bumpers on 53 Dragon. Old original bolts, washers, didn’t look right.
I found them all New Old Stock.

Thank you Corsair. I found that after I posted last night but was still unsure if that was what I needed. I would’ve thought there would be a correlation to a diagram showing where they go.

Dragon, that brings up a whole other issue. I’ve been trying for several years to find the correct oval shaped chrome headed carriage bolt for the bumpers. I got the long ones I need but there’s 2 shorter ones that I can’t find anywhere.
